The Plantation Australia 2009 has been distilled in pot stills and matured for a total of 11 years in ex-bourbon barrels, followed by an additional year in Ferrand casks. The finishing touch involves a 4-month aging process in Palo Cortado Sherry cask. The nose of this rum boasts fruity elements of pear, mandarin jam, grapefruit zest and dried apricot, as well as spicy undertones of pepper, cloves, cinnamon, anise and pistachio. The Palo Cortado cask provides oxidative and vinous touches to the aroma. The palate is well-balanced, showcasing the rum, oak and sherry flavors on notes of chocolate, almond, cherry, blueberry, banana, bitter orange and elegant rose.
